Mushroom, Kale, & Bacon Frittata

Ingredients
- 6 eggs
- ½ cup heavy cream
- ½ cup mushrooms
- 2 leaves kale or handful spinach
- 2 slices bacon
- salt, to taste
- cheddar cheese, to taste optional
Instructions
- Preheat the oven to 375F, and lightly grease a pie dish.
- In a small bowl, whisk the eggs and cream together. Add a generous sprinkle of salt, mix, and set aside.
- Chop the bacon, mushrooms, and kale.
- Heat a skillet over medium heat. Add the bacon and cook for about 2 minutes. Add the mushrooms and kale and saute another 2-3 minutes.
- Add the vegetable and bacon mixture to the eggs. Stir and pour into the pie dish.
- Sprinkle shredded cheddar cheese over the top and bake for 35 minutes. Allow to cool for 5-10 minutes before eating.
