Mushroom, Kale, & Bacon Frittata

This frittata is a delicious and healthy way to start your morning! It’s full of protein and healthy fats to keep you satiated all morning. And because it’s so low in carbs, it won’t spike your blood sugars. It’s quick to throw together and a great way to add veggies to your first meal of the day. Feel free to use the veggies you have on hand: spinach is a great sub for kale, and zucchini or another soft vegetable can replace the mushrooms.

Ingredients
  

  • 6 eggs
  • ½ cup heavy cream
  • ½ cup mushrooms
  • 2 leaves kale or handful spinach
  • 2 slices bacon
  • salt, to taste
  • cheddar cheese, to taste optional

Instructions
 

  • Preheat the oven to 375F, and lightly grease a pie dish.
  • In a small bowl, whisk the eggs and cream together. Add a generous sprinkle of salt, mix, and set aside.
  • Chop the bacon, mushrooms, and kale.
  • Heat a skillet over medium heat. Add the bacon and cook for about 2 minutes. Add the mushrooms and kale and saute another 2-3 minutes.
  • Add the vegetable and bacon mixture to the eggs. Stir and pour into the pie dish.
  • Sprinkle shredded cheddar cheese over the top and bake for 35 minutes. Allow to cool for 5-10 minutes before eating.
