Basic Vanilla Granola

I love vanilla, and I especially love good vanilla granola. I wanted to make a simple, basic granola recipe to put up here, so I decided on easy vanilla granola with just a few basic ingredients. The ingredient list is healthy and nourishing so you can feel good about eating this granola! Unlike store-bought granolas that are full of sugars and vegetable oils, this granola is made with honey and coconut oil. Pair it with some plain, full-fat yogurt, banana, and a drizzle of honey for a delicious breakfast or snack!

*Note: I would normally use old-fashioned rolled oats, but I accidentally bought a huge bucket of quick oats, which I used in the recipe. I haven’t tried making it with rolled oats yet, so I’m not sure how that would change or affect it, if at all.

Basic Vanilla Granola

Ingredients
  

  • 3 cups oats*
  • ¼ cup almonds chopped
  • ¼ cup walnuts chopped
  • pinch salt
  • ½ cup coconut oil
  • ½ cup honey
  • 2 Tbsp vanilla

Instructions
 

  • Preheat the oven to 325.
  • In a large bowl, mix the oats, almonds, walnuts, and salt.
  • In a small saucepan, melt the coconut oil and honey together. Remove from the heat and whisk in the vanilla.
  • Pour the wet ingredients over the oats. Mix everything together really well.
  • Spread the granola onto a baking sheet. Bake for 18-20 minutes.

Notes

*I used quick oats. Using old-fashioned oats may increase the baking time.
