I love vanilla, and I especially love good vanilla granola. I wanted to make a simple, basic granola recipe to put up here, so I decided on easy vanilla granola with just a few basic ingredients. The ingredient list is healthy and nourishing so you can feel good about eating this granola! Unlike store-bought granolas that are full of sugars and vegetable oils, this granola is made with honey and coconut oil. Pair it with some plain, full-fat yogurt, banana, and a drizzle of honey for a delicious breakfast or snack!
*Note: I would normally use old-fashioned rolled oats, but I accidentally bought a huge bucket of quick oats, which I used in the recipe. I haven’t tried making it with rolled oats yet, so I’m not sure how that would change or affect it, if at all.

Basic Vanilla Granola
Ingredients
- 3 cups oats*
- ¼ cup almonds chopped
- ¼ cup walnuts chopped
- pinch salt
- ½ cup coconut oil
- ½ cup honey
- 2 Tbsp vanilla
Instructions
- Preheat the oven to 325.
- In a large bowl, mix the oats, almonds, walnuts, and salt.
- In a small saucepan, melt the coconut oil and honey together. Remove from the heat and whisk in the vanilla.
- Pour the wet ingredients over the oats. Mix everything together really well.
- Spread the granola onto a baking sheet. Bake for 18-20 minutes.
