Ingredients
- 1 cup pumpkin
- 2 eggs
- 2 Tbsp maple syrup
- ½ tsp vanilla
- ½ tsp apple cider vinegar
- ¼ cup avocado oil*
- ¼ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 1½ tsp pumpkin pie spice
- ¾ cup whole wheat flour
Instructions
- Whisk the wet ingredients together.
- Add the baking soda, baking powder, salt, and pumpkin pie spice and mix well.
- Add the whole wheat flour and gently stir until just combined.
- Cook on a heated waffle iron.
Notes
*Melted coconut oil will also work in place of avocado oil. Or any other neutral tasting oil.
**You can also make pancakes with this batter if you don't have a waffle iron!
