These waffles are soft, pumpkin-y, and perfect for a cold fall morning! Made with fiber-packed whole wheat and pumpkin, these waffles are not only delicious but also healthy and hearty!

Equipment

  • waffle iron

Ingredients
  

  • 1 cup pumpkin
  • 2 eggs
  • 2 Tbsp maple syrup
  • ½ tsp vanilla
  • ½ tsp apple cider vinegar
  • ¼ cup avocado oil*
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1½ tsp pumpkin pie spice
  • ¾ cup whole wheat flour

Instructions
 

  • Whisk the wet ingredients together.
  • Add the baking soda, baking powder, salt, and pumpkin pie spice and mix well.
  • Add the whole wheat flour and gently stir until just combined.
  • Cook on a heated waffle iron.

Notes

*Melted coconut oil will also work in place of avocado oil. Or any other neutral tasting oil. 
**You can also make pancakes with this batter if you don't have a waffle iron!
