These muffins are super quick and easy to make! Just throw the ingredients in the blender, blend until smooth, and bake away! They’re a healthy, delicious, and gluten-free snack to take on the road, give to your littles, or as a healthy dessert! With oats, apples, and almond butter, these muffins make for a filling and nutritious snack!

Ingredients
  

  • 2 apples
  • 2 large eggs
  • ½ cup unsweetened almond butter
  • 1½ cups rolled oats
  • ¼ cup maple syrup
  • 1 Tbsp cinnamon
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla

Instructions
 

  • Preheat the oven to 350.
  • Place everything in a blender and blend until smooth. (If your blender isn't great, I recommend blending a few ingredients at a time)
  • Pour the batter into a greased or lined muffin tin. Bake for 25-27 minutes.
