Sweet Radish & Cabbage Slaw (No Mayo!)

This coleslaw is light, fresh, and hydrating! With a lemon honey dressing, it tastes just like lemonade-covered veggies! Crunchy ingredients like radishes, red cabbage, carrot, and apple, make this coleslaw super healthy (and don’t worry you can’t taste the radishes)! And I kept this coleslaw simple with just 7 fresh ingredients. Enjoy!

I’ve never been a huge radish fan. However, I’ve always been intrigued by them because of their bright pink color. There’s not a lot of bright pink vegetables, so I’d really like to like them more. Once in a while, if I’m feeling brave, I’ll venture to give them a try again. Usually, I just slice them very thinly and add them to my salads, but I wanted to make an actual recipe with them this time. It’s usually the spicy flavor of radishes that turns people away from them, however, in this dish, you can’t even taste them! To be honest, I drank up all the liquid at the bottom of the bowl it was so delicious!

After telling my parents about this delicious recipe, they both commented on how it seemed like everyone used to grow radishes in their gardens, but not so much anymore. Radishes are really easy to grow and can actually be planted multiple times during the growing season, both during the spring and fall. So it makes sense that it was a common garden veggie. I don’t hear of many people growing radishes these days, but I wouldn’t be surprised if they started becoming more popular in the near future.

No-Mayo Slaw

I’m also not a big fan of coleslaw, especially store-bought slaw. Homemade isn’t too bad, but it’s still not something I’d go out of my way to make or eat. Something about the mayo-based dressing just isn’t very appealing to me.

What I love about this recipe though is that it’s mayo-free! With just 3 ingredients in the dressing, it’s clean, fresh, and slime-free. The honey and lemon really preserve the natural crunch and freshness of the ingredients, and the avocado oil brings everything together. And if you want an extra twist to this slaw, throw in some grated ginger for some added health benefits and a little zing! You’ll love how crunchy and hydrating this slaw is…perfect for a warm summer night!

Ingredients

You won’t need much for this recipe, just:

-Radishes

-Red Cabbage

-Carrot

-Apple

-Lemon

-Honey

-Oil (I used avocado oil)

-Ginger (optional)

How to Make the Slaw

It’s really quite simple.

Shred

First, you’ll shred or grate the radishes, cabbage, carrot, and apple (and ginger if using) right into a medium-sized bowl together. I used a cheese grater and it didn’t take too long at all. However, it would go much faster I’m sure with a salad shooter or electric shredder. Mix all the ingredients together.

Dressing

Next, whisk the honey, lemon, and oil together in a small bowl. Pour over the slaw and mix.

And with that, you’re done!

Ingredients
  

  • 1 bunch radishes about 6
  • ½ small red cabbage
  • 1 carrot
  • 1 apple
  • 1 Tbsp fresh ginger optional
  • 1 lemon juiced
  • 1 Tbsp honey
  • 1 Tbsp avocado oil

Instructions
 

  • Shred the radishes, cabbage, carrot, and apple into a bowl. Mix together.
  • Whisk the lemon, honey, and oil together. Pour over the vegetables and mix well.

Notes

I used a gala apple. You could try a green apple, but it probably wouldn't be as sweet.
I recommend avocado oil because it doesn't have a strong taste. Olive oil might lend a slight olive flavor. Same with coconut.
