Salmon with Guacamole (Keto-friendly)

Salmon with guacamole is full of healthy fats that will help boost your brain health, improve nerve function, and regulate your blood sugar levels to help reduce inflammation. With salmon, olive oil, and avocado this dish is packed with healthy fats to keep your body functioning like a well-oiled machine! Not to mention it’s delicious! 

Guacamole with salmon might not sound all that good, but trust me the combination of ingredients like avocado, cilantro, and lemon work perfectly with the baked salmon! Salmon is one of the healthiest foods out there. It’s now considered a superfood. We try to have it at least once every one to two weeks, which is why we’re always looking for new and delicious ways to spice up our salmon.

This ingredient list is simple and clean, and you’ll enjoy how good you feel after eating it!

-salmon

-avocado

-cherry tomatoes

-shallot

-cilantro

-lemon juice

-olive oil

-salt

What Makes Salmon so Healthy?

There are many health benefits that come from eating salmon. First, let’s point out that you want to buy wild-caught salmon whenever and wherever possible. Wild-caught salmon comes from Alaska, and is, well, wild! Other salmon are conventionally farmed and higher in contaminants.

One of the amazing health benefits of salmon is its high levels of omega-3 fatty acids. These are your DHA and EPA if you’ve ever seen those on fish oil supplements. Omega-3s are essential for brain function and cardiovascular health (lower serum triglycerides), as well as for reducing chronic inflammation. And guess what? Everyone (nutritionists, scientists, your neighbor) agrees that omega-3s are extremely healthy. Unlike most health topics, there are no disagreements about this one. So, eat up and enjoy that salmon, knowing that you are really giving your body a powerhouse of nutrients to work with!

Avocados are also full of healthy fats (monounsaturated fats). Some of their health benefits include:
-high in potassium
-helps lower “bad” cholesterol
-high in folate which can help with lowering depression, some cancers
-lowers the risk of Alzheimer’s, arthritis, and cardiovascular problems by reducing inflammation

How to Make Salmon with Guacamole

This dish is easy and simple. First, preheat the oven to 350.

Next, line a baking sheet with foil and place the salmon skin-side down. Bake for 25 minutes.

Pro Tip: Salmon continues to cook even after you take it out of the oven, so I recommend taking it out before it’s fully cooked. You can avoid having over-cooked, dry salmon this way. 

While the salmon is baking, combine the rest of the ingredients in a small bowl and gently mix them together. When the salmon is ready to eat, top each fillet with guacamole and enjoy!

-green salad

-roasted asparagus or other veggies

Ingredients
  

  • 2 lbs salmon fillet
  • 2 avocados diced
  • ½ cup cherry tomatoes quartered
  • ½ small shallot minced
  • 1 Tbsp fresh cilantro chopped
  • 1 Tbsp lemon juice
  • 2 Tbsp olive oil
  • ½ tsp salt

Instructions
 

  • Preheat the oven to 350.
  • Line a baking sheet with parchment paper. Place the salmon on the pan and drizzle with olive oil and salt.
  • Bake for 25 minutes (to prevent having dry salmon: remember that it continues to cook after you take it out of the oven, so it’s okay if it looks slightly underdone.)
  • While the salmon is baking, gently mix the rest of the ingredients in a small bowl.  
  • Top each salmon fillet with a generous scoop of the guacamole.
